Some of them can taste sour and the longer you have your starter the more likely you are to taste a slight sourness in the bread, it's not a bad sour taste, it's only fairly mild. I made some of the white spelt last week and I've been enjoying every mouthful.
It really can. I have IBS but I can tolerate spelt when it's made into sourdough. I had some cornflakes a few weeks back which were supposed to be low fodmap. I had them on the Saturday and Sunday and by the Sunday night I was ill, never again, they had barley in them.
Ibs too plus allergies. Fodmap doesn't seem to make much difference to me, most of the things on the list are a no. Stress certainly doesn't help and I find that sometimes a food can disagree with me when I've been fine before.
Thank you. At one time I was down to one type of cracker and boiled water! Thankfully I've improved a fair bit. I'm not sure how my leukaemia impacts my other issues either and none of the doctors know so I just do my best!
I'm very impressed by your cycling, I've never been great on a bike but was lucky enough to have a horse until last year. Daily field clearing was good exercise!

Looks like a couple of engineering bricks to me! still you can park your bike between them!! No they look really tasty but my weight needs watching,so i can look but cant touch! Enjoy it for all of us wash your hands though! stay well all

Ha ha, can't you tell I'm using my phone keyboard, it has mind of its own LOL.π
It's a needs must as I can't have yeast, normal flour and even a GF bread upset my tummy because of the ground almonds in it. I do love sourdough though. I agree, all it has in it is spelt flour and water.
If I close my eyes I can taste it & it's delicious! Do you think it would be ok for me , as I have a wheat allergy & am trying to find some flour that smells nice when cooking & tastes even better. π π₯. Chris
If you have a wheat allergy then I would say no. I have IBS and have an intolerance to the fructans in wheat but because of the way the sourdough is made it's better for my tummy. The gluten in spelt is more soluble than wheat gluten (that's the explanation on the internet). I did make some quinoa bread the other day and it was okay but the problem is it was quite bland so if I make it again I will flavour it with herbs and or spices.
