450g of mashed sweet potato
2 tins of tuna
1 tsp of chilli flakes ( optional)
180g of onion, diced small
1 egg
I clove garlic crushed
Wholemeal flour
Boil sweet potato until just soft enough to mash. If you do them for too long they become a little too wet
Fry the onions, whatever method you like but I always use coconut oil until softened.
when the onions are done add them to a bowl with the mash, drained tuna, chilli flakes and egg then form into patties. To be honest the egg is there as a binder and I leave this out. They still bind together ok.
Dust the burgers with the flour or you can leave this off and fry until golden brown of both sides. Again I don't bother with the flour and still works fine.
Place the pan into a preheated oven at 180 degrees until the burgers are hot in the middle. I usually give them 15 mins.
I cook a big batch of these and freeze them uncooked.
My big batch recipe is two biggish sweet potatoes, one onion, 6 tins of tuna, chilli flakes to taste and that's it. The last time I made these I got about 14 burgers but depends on how big you make them
If you want to make them special you can coat with breadcrumbs before you fry them.
I coat in flour, dip,in beaten egg then coat in Panko breadcrumbs but can use any type.
I have them this way as a treat or breadcrumb them for others to eat while I have the none breadcrumbed.
They look really good coated and does add a nice taste and texture to the burgers.
I haven't a clue what the calorie count is but you people with your apps can soon work this out.
I tend to have a salad and tomatoes with these and limit myself to two smallish burgers.
My partner loves them with baked beans.
