Recipe for those who like cheesecake...

Cheesecake recipe for using up some of those lovely blackberries found everywhere at the minute.

Preheat oven to 180*C ( about 350F or gas 4). Lightly grease and line a 7 inch cake tin with non stick baking parchment.

In a blender whizz 175g cottage cheese, 150g low fat natural yoghurt, 1tbsp wholemeal flour, 2tbsp golden caster sugar, 1 egg + 1 egg white, blend until smooth. Put into a bowl and add finely grated zest and juice of 1/2 lemon and 200g blackberries ( well cleaned and dried in a tea towel) , stir well. Tip the lot into the cake tin and bake for about 1/2 hour, turn the oven off and leave for another 1/2 hour. Run a knife around the edge and turn out. Serve still warm.

Total calories for whole cheesecake is 470kcals. This serves 4-5 people, so 118-94kcals each slice.

Wow, thank you for sharing this, I've been turning down my daughters full cream strawberry cheesecake and it's been a bit tough! I'm a girl with a plan for tomorrow. It involves shopping, cooking and eating cheesecake.

...and I plan to share some of it too.

Gosh, I hope it lives up to your expectations hun. If you want an alternative to a dollop of cream with it I have a recipe for a creamy whip. It is a bit of a faff to make though.

sprinkle 1/2tsp of powdered gelatine over 1tbsp cold water in a bowl and leave to sponge for 5 minutes. Place the bowl over a pan of hot water and stir until dissolved. Leave to cool. Whisk 50g of skimmed milk powder, 1 tbsp caster sugar, 1 tbsp lemon juice and 4 tbsp cold water until frothy. Add the dissolved gelatine and whisk again for a few seconds. Chill for 1/2 hour then whisk again until very thick and frothy. Serve within 1/2 hour of making.

Like I said, it is a bit of a faff but tastes fine. Not sure of kcals as I haven't made this for a while so have none of the ingredients to hand, it is quite low though for the amount you would use each portion. 😊

I crave when when others are celebrating or indulging. So will have a go at this and freeze portions for when needed. Don't think I have patience for the cream. I tend to use the total zero with splendor ...I suppose it's for the eyes rather than taste. Have you got a recipe for 40 cal piña coladas lol.....

40 kcal pina colada, now there's a challenge. Non alcoholic version it would have to be probably, Hmmmm, you have my cogs whirring now..........

Hey Portlandprincess, I have met your pina colada challenge, non alcoholic of course, lol. Not got it quite to 40 kcals but near - 47kcals and no hangover!!

30g tinned pineapple chunks, 30ml pineapple juice, 60ml coconut water, 1tsp coconut extract and 2 big ice cubes. Blitz until smooth.

I have just made one, yummy. Of course you may have the fruit/sugar police after you, but hey once in a while is fine, just balance out with the rest of your day.

It won't be everyones cup of tea hun. I don't have a sweet tooth at all and puds are made for my family rather than myself. It's just an alternative to maybe try for those who are pud/dessert lovers and would fit in nicely with daily calorie allowances. Some folk will like, some will hate. 😊

Wow - well straight off those people should be banished to an island somewhere - that kind of strange behaviour should not be tolerated in civilised society!

Dave's men in white coats maybe need to take their attention off him (for doing mad between-customer-exercise in his shop) and be more concerned about us, with our insane disinterest in cheesecake!

Ruth, I must be the craziest of us all as I posted the blinking recipe!!! My ex. used to love cheesecake and could eat a whole one of those shop bought ones, though baked cheesecake has very little resemblance in taste or texture to those. The one I posted here was made in a vain bid to curb his unhealthy indulgences. Personally I still don't like cheesecake, lol. Think perhaps we are the minority though. 😊

We have a Jewish festival that is all about the cheesecake. In the past I've always had a small piece (of the homebaked variety) out of politeness but it just feels like eating slightly sweet claggy vaguely cheesey clay. Sometimes with slimy swollen raisins in, sometimes without. Glad to be advised off cheese by the doc and have a valid reason to say no now!

If your a cheesecake aficionado then this may be just too drastic a version - bit like marmite, you either love it or hate it. All I can say is give it a try, the ingredients aren't too expensive. It is best made with hedgerow blackberries though, free and gets you a few brownie points with exercise too, lol. 😊

I have a nice German recipe for a baked cheese cake using quark. You can use fruit in it, too. The original has got sugar in it, but I'm sure you can leave it out or cut it.

I grew up with that, si I really use a fair bit of quark. 😊

470 for a WHOLE cheesecake, ShellieL? Sounds like an individual portion to me ;) #unashamed

If you could eat the whole lot hun, go for it. At 470kcals you won't break the calorie bank for the day. BUT you know full well, as I do, there is more to healthy eating than just calories. Little moggy will be expanding again, lol, if the whole thing is your portion size guide you go off. Now, do you consider yourself chastised? Hehehehe. Have a fabby, portion controlled day pusskin. 😂😈😇

You speak the Truth. Of course, I would NEVER eat a whole cheesecake...

Sounds yummy, all kids over on bank holiday Monday so I'm going to give it a go with th h loads of fruit should be good.
