I'm really struggling with my sweet tooth at the moment. Does anyone have any healthy and easy desert recipes? Everytime I find ones that look nice they have a load of random/faffy ingredients and I don't have an awful lot of time at the moment to be in the kitchen for ages π

My favourite easy recipe is egg custard, not too sweet but very satisfying. Whisk two eggs into half a pint of (preferably) whole milk, add 25g caster sugar and whisk again, strain into a buttered dish (or four little ramekins), sprinkle with nutmeg if desired and bake in the oven (150 or fan 130*C) for 45 minutes if in a large dish, or 20-25 minutes for ramekins, till set. Serve straight away, but also good chilled. I have to confess that OH and I devour the whole lot between us, although it can make four small servings. Good and wholesome food for new mums!

Warmed peach halves with crumble topping accompanied by orange whipped cream. Halve and de stone peaches and place in oven to soften and warm slightly. Mix butter, sugar & flour for a crumble mixture, spread on baking tray and put in oven to become crunchy. ( you dont need a lot)
Whilst they are doing their thing in the oven, whisk cream and we added a dollop of Orange curd to it just to give a hint of flavour. Place peach halves in bowl, sprinkle with crunchy topping and serve with cream. We also had some spare strawbs that needed eating, but im sure the idea would work with most fruit.
Daughter No 2 has just qualified as a chef, and specializing in sweet treats and desserts, so this was one she did for us the last time she was home. Seemed to take no time at all to prep. love the sound of your egg custards too. The simple ones are always the best.
I think my favourite is mug cakes. The basic recipe is the same then you just add whatever flavouring you want. Cook in the microwave for roughly 1 minute. They can be done in the oven but i don't know the temp or timings.
The basic recipe i use is: 10g melted butter, 1 tablespoon coconut flour, 1 or 2 tablespoons erythritol, 1/2 tsp baking powder, a dash of vanilla and 1 beaten egg. I've done a lemon, chocolate, thyme and lime and caraway seeds and thyme. Put everything in a mug or large ramekin and mix til smooth then microwave.

Sugar free jelly, made using tinned fruit, usually we have either orange or raspberry, less than 80 calls per portion. Dissolve crystals in 1/4 pint of hot water add tin of fruit and itβs juice, make up to 1pt with cold water if necessary, this sets really quickly too.
Easy chocolate mousse: Melt 25g high cocoa value chocolate i.e. 70% cocoa or more. Mix it into 100g cream cheese or ricotta or mascarpone. Pour it into a serving dish or individual serving dishes and let it chill for a couple of hours or overnight. (That's a fairly scant amount of ingredients, basically chocolate is 25% of the cream cheese weight. So 300g cream cheese needs 75g melted 70% chocolate.) I did this with cream cheese and lemon curd (no chocolate but I could have grated some on top before chilling), same proportions. I added some grated lemon rind. It was very nice.
You could break up four ginger oat cakes by putting them in a freezer bag, zipping the top of the bag then set about them with a rolling pin/sauce pan.
Melt 25g butter in a pan. Add the ginger oatcake crumbs and combine. Divide the buttered crumbs into individual serving dishes or one large dish. Pour the above mentioned chocolate mousse on top and let it chill for a while. Ginger and chocolate mousse cheesecake.
You could put some mint essence into the chocolate mousse for a mint chocolate flavour. Or some orange essence if you like chocolate and orange flavour.
I usually make a tray of crumble mix spread out and baked til golden brown then put it into a glass container. I use it for quick crumbles , a little on top of yogurts ,or ice cream to make it look more like a proper desert! You donβt need a lot each time and it doesnβt go soggy like some crumbles are!!
IMO, it depends on whether you are trying to stick to low calorie, or low carb. I do low carb, so I find desserts easy with sugar substitutes and lots of full cream/eggs/nut flours and occasionally raspberries or blackberries. I happen to not love stevia (just taste-wise I mean) so I use monk fruit or a mix of monk fruit, erythritol and allulose,
Here's something REALLY simple, if you'll have artificial sweetener: pour yourself a big glass of diet cream soda or root beer, then add a generous amount of full cream. It tastes like an ice cream soda...zero carbs!
