Your curry sounds and looks lovely! I haven't tried adding red peppers to a curry, yet. That sounds like a great idea. How much of each item do you use for the curry recipe? :-)

Thanks Activity2004. I am not particularly fussy about measurements of ingredients in my cooking, I just add and taste as I go along. For this curry I used 1 tin chickpeas in water, 1 white medium size onion, 1/2 red pepper( left over from my other recipe so added it to avoid wasting it),a handful of fine green beans, tin of fat reduced coconut milk ( didn't use all of it as I didn't want the end result to be too watery), spices: 1/2 TSP curry powder, cumin, tumeric, garam masala, 1/4 TSP chili powder and 1/2 cup brown rice. This is my own version of chickpea curry which I enjoy.

This is a big help. Thank you. When I have a chili night planned, I will definitely try everything you had put in the recipe. How many servings does it have?

This was for me, I used 3/4 of It, and used the rest for my lunch the next day with a baked potato. So if you are making it for more than four people for instance, you could use 3 tins of chickpeas, 2 tins of coconut milk, for the spices use 1 TSP each,x1 large onion. As I said, I don't really bother much about measurements, just keep tasting as you go along to get the taste you like. Good luck and enjoy your night
