I had several bags of mixed fruits and berries in the freezer,but no longer fancied them,so what to do........I made a cake with them, and not meaning to brag,but its delicious.
I made a basic cake mix,but added twice the amount of flour.
I then drained the fruits,put a generous amount of flour in a bowl,tipped the fruit in,and gently forked the fruit gently till the fruit was covered,and this stops the fruit becoming a sloshy mass,it keeps it separated and stops it sinking to the bottom.
Cooked on a low heat for around 2 hours,but kept inserting a knife to ensure the middle was cooked,just trial and error really.
