Hi everyone,

If I'm going to eat cakes I like cakes that have fruit in them and today I made this cherry and mixed dried fruit cake.

Here's the recipe, 225g self raising gluten free flour 170g butter 3 free range eggs 150g golden granulated sugar 120g mixed dried fruit with peel 75g cherries 1/2 teaspoon mixed spice. Mix thoroughly adding the fruit last spread in a greased cake tin I used a loaf tin and bake until cooked through approx 35 mins @160C

Cakes like this are perfect for afternoon tea...😊

Hi Jerry,

Your cherry fruit cake looks and sounds wonderful! Thank you for sharing the recipe. Are the cherries dried? :-)

That’s great to hear. I like black cherries πŸ’ mixed in certain cakes/desserts.πŸ˜€πŸ‘

Oh, you lost me with the glacΓ© cherries, they are really just candies. I wonder what it would be like with fresh ones. I guess the cake wouldn't keep as well, and maybe soggy?

I buy mine from my Wholefoods shop so they not quite as bad as supermarket ones and my favourites look very dark which I really like. πŸ’

They will still be full of sugar, it will just be organic sugar πŸ˜‚

Corn syrup rather than artificial sugars which suits me. πŸ‘

Your fruit cake came out looking really lovely. It reminds me of panettone which I dearly miss eating from my healthy youthful days that allowed me to enjoy gluten . Merci for the recipe .

Thank you Imaaan this is why I bake things that I'd otherwise miss and there's no additives so is a wholesome as a fruit cake can be. 😊

Nice looking cake Jerry, go very nicely with a cup of tea. πŸ™‚

Thank you Debs it’s nice when the fruit doesn’t sink so I was pleased. 😊

That sounds good Jerry, once I have all the chutneys done, I can think about cakes again. My kitchen resembles a pickle factory just now. Hilda Baker and her watch with one hand came to mind after I kept looking at my wrist for a watch, I hadn't put on!!

Thanks Alice and I've seen your wonderful jam so imagine that your chutneys are equally professional. I like a kitchen that look industrious...well thats my excuse.

You enjoy your lovely jams and chutneys now. 😊

More legendary baking Jerry. I think you should produce a gluten free cookbook as you’ve really perfected the art of gluten free baking! πŸ‘πŸ˜Š

Yes it's really nice to have the recipes. I have no need to eat gluten-free but you cakes always look and taste so yummy that I often follow them to the letter, though I have successfully adapted them to use with regular flour too. πŸ‘πŸ˜ŠπŸ°πŸ§
