Here's what I had for dinner tonight ,its a potato and vegetable bake in a tomato sauce. I saw a recipe and thought what a good idea so made this with local potatoes sliced cooked with diced onion cauliflower broccoli sliced carrots and peas with a tinned of chopped tomatoes black pepper and ginger, then I put the sliced potatoes on top and topped up with low salt bouillon and enough water to almost cover and baked in the oven for about 45mins @170C
I enjoyed it and it helps towards my 5 a day. π

They're very versatile aren't they tinned tomatoes as we had them for tonight's dinner along with leftover breakfast hash from this morning along with red and sweet potatoes, mushrooms, baked beans and sausages and bacon.
