I was going to make a cottage pie but had these lovely local new potatoes so instead just baked them with garlic on top of the lentils and veggies.
It's a really east meal made with red onion green lentils tomatoes mixed frozen veg in a light gravy made by adding a desert spoon of rice flour to some cold water before adding low salt bouillon and a little yeast extract and topping up with more water. The potatoes were par boiled and then just put on top of the veggies with diced garlic and left to bake for just over an hour on low.
It was really nice and perfect this weather, it is gluten free and plant based so ticks the free from box, as well as being wholesome and easy to prepare.
