Irish Boxty

I had some mash left over so I decided to try my hand at vegetarian potato pancakes, otherwise known as Irish Boxty. They turned out ok with a few herbs from the garden thrown in. Apparently they were staple diet in Ireland at one point😊

Well, I used buttermilk but I’m sure you could substitute plant based. I did it really because I had a surfeit of mashed spud😊

I love boxty Alb and they definitely were a good filling meal in Ireland, my husband was brought up on them, and with the extra herbs thrown in I'll bet they were 😋

Yes, apparently there was an old Irish poem that said you couldn’t get a man if you couldn’t make a Boxty. My Mum was Irish but never made them so a new discovery for me😊

Gosh! That takes me back. Not had them for years. Definitely, when preparing tonight's dinner I will do tons of extra spuds, ready for Boxties tomorrow. Slurp 😋

In N.Ireland its known as Potato Farls or Potato Bread usually fried in the pan as part of an Ulster fry along with bacon, sausage, fried egg, mushrooms & tomato😋 delicious also nice toasted with loads of butter.
