I had some mash left over so I decided to try my hand at vegetarian potato pancakes, otherwise known as Irish Boxty. They turned out ok with a few herbs from the garden thrown in. Apparently they were staple diet in Ireland at one point๐Ÿ˜Š

Well, I used buttermilk but Iโ€™m sure you could substitute plant based. I did it really because I had a surfeit of mashed spud๐Ÿ˜Š

Glad to hear u enjoyed them

I love boxty Alb and they definitely were a good filling meal in Ireland, my husband was brought up on them, and with the extra herbs thrown in I'll bet they were ๐Ÿ˜‹

Yes, apparently there was an old Irish poem that said you couldnโ€™t get a man if you couldnโ€™t make a Boxty. My Mum was Irish but never made them so a new discovery for me๐Ÿ˜Š

I used to have these regularly with steak in an Irish pub in Kentish town, London..called The Castle. It was nearly 45 years ago, so don't know if they still doing them..๐Ÿ˜They probably still still got my famous check on the wall that I got from John Murphy, the owner of Murphy's construction.

You could be right Barry, if that's the case you know more about dahn Camden than I do, you been keeping up with things I ain't been down Kentish Town for a while! I'm sure that it will become a high class food establishment in the future๐Ÿฒ๐Ÿ˜˜

Gosh! That takes me back. Not had them for years. Definitely, when preparing tonight's dinner I will do tons of extra spuds, ready for Boxties tomorrow. Slurp ๐Ÿ˜‹

In N.Ireland its known as Potato Farls or Potato Bread usually fried in the pan as part of an Ulster fry along with bacon, sausage, fried egg, mushrooms & tomato๐Ÿ˜‹ delicious also nice toasted with loads of butter.
