I've been getting some of my neighbours surplus fruit and veg including some Bramley apples so this morning I made this apple flan using a gluten free sponge as the base with the addition of a large grated apple added to the mix then baked with slices of Bramley apple on top as they are quite sour apples I sprinkled a little Demerara sugar on them and you can see how this has caramelised on top.
Here's the recipe:
ingredients, 110g self raising gluten free flour 110g organic butter 2 free range eggs 100g Daemerarra sugar 1 large Bramley apple grated 1 tea spoon of cinnamon. I large Bramely sliced for the topping.
Whiz everything up in a food processor and spread in a flan dish put the apple slices on top and bake for approx 20mins @180C.
Bramley apples are my favourite cooking apple so I was pleased with this gift, I've home grown cucumbers and tomatoes already with some more of my own tomatoes about to be picked showing September is harvest month here. I've also a neighbour who gives me fresh eggs as I cut her hedge, so its all very friendly and amicable.
I'm looking forward to having some later and there was some apple sponge mix left over so I made 3 small individual ones so I've plenty for the freezer and another day.
