Today I made fresh peach cobbler to have with my gluten-free, dairy-free Tahitian&Madagascar Vanilla bean frozen ice cream. π
There are two steps to make peach cobbler:
Step1:
Glaze fresh peaches (4 cups sliced) with maple syrup over pan for 15 mins. Up to you how sweet you want, I used 2 tbsp of maple syrup.
Step 2: Make the batch for peach cobbler
1. 1 cup of gluten-free multi purpose flour
2. 1 tbsp of baking powder
3. Half cup of almond milk
4. 2 tbsp of maple syrup
5. 1 tsp of vanilla extract
6. Sprinkle some ground cinnamon
Coat baking pan with gluten-free, vegan butter first then pour the mixture on top and layer glazed sliced peaches as the final step. Bake for 30 minutes at 350F in the oven.
I really love how it turns out not typical traditional too sweet of peach cobbler.πTop it off with yummy vegan ice cream. Perfect with a cup of chamomile flowers tea. ππ

Thanks for sharing your lovely recipe, it looks really good. I am wondering about doing something similar, but using plums, as I have quite a few of them to use up. You've given me a good idea. I was going to do a crumble, but I think a lighter cobbler might be a good option. I'll hope to make it on the weekend.
Hi Hidden I'll attach a photo of my plums dessert - I didn't make a cobbler in the end, I just put a little honey, water, mixed chopped nuts and 1 sachet of sugar in a pan with the chopped plums and heated it - and then served it with vanilla ice-cream, and it was delicious!

That looks to die for Koko. I'm ashamed to say that this is one of those desserts I would wolf down in a minute and wonder if I really taken the time to enjoy it lol I love how you list the recipe. It looks easy enough to make even for someone like me who doesn't know jack squat about baking π

Fabulous - this sounds and looks wonderful. I don't think I have ever tried Cobbler - looks Like I have been misssing out. I bet that was delicious and I love the final touches with the rasberry on top of the Ice cream π so professional
