I felt so much energy today so I decided to be creative in my kitchen. Thank you Happyman4 for inspiring me to make fishcakes with Greek yogurt dip in mind. ππ
My fishcakes recipe:
1. Defrost cods and fillet and mash them in a bowl (I like to taste some fish chunks so I donβt make them too mushy).
2. Dice serranos(hot jalapeΓ±o), dills, cilantros, peppers, red and green onions.
3. Mix Gluten-free Almond flour with one egg/vegan egg and a tbsp of olive oil.
4. Mix them all together and you can add any salt if youβd like.
5. Make Fish paste into a ball dipping in the mixture of gluten-free breadcrumbs and almond flour).
6. You can fry in hot oil Or coat fishcakes paste with spray olive oil using Air Fry.
I followed recipe of Tzatziki dip: plain yogurt, diced cucumber, olive oil, freshly chopped mint and dill, garlic, lemon juice and a bit celery salt.
Itβs so refreshing when you chill in the fridge before serving. ππ
I love to have fish cakes with Avocados and Tzatziki dip. Itβs so simple and delicious to make your own fishcakes. ππ
*I include cilantros in almost every of my single dish as you know I live in metropolitan area of California and many restaurants serve avocados and cilantros, almost like a requirement to be called Californian.ππ For me, itβs like my spiritual cooking as my bread and butter. π (FYI: No butter for me)
