My Lunch Today and Leftovers From Last Night’s Dinner

Hi everyone,

This is what I had for lunch today. It was two gluten free waffles with crunchy peanut butter, fresh blueberries and a Greek yogurt. The total carbs. with the yogurt was: 84.

For dinner tonight, we decided to have last night’s quiche with salad, dressing, fake bacon bits, diet iced tea and Greek yogurt. The leftovers were really good and I have to say it was a tie between broccoli and spinach. The total carbs. were 54 for the meal.😀👍

Awesome. So the fake bacon bits are not bacon but a substitute ingredient, correct?

That’s right. They are made out of soy., but they taste like real bacon pieces.😀👍

Ah, I see.

Hi Leah, That looks scrumptious! 😋👍

I got the same waffles and I love organic peanut butter as a great source of protein.

Im snacking on blueberries now as we speak.😋

Great choice for quick lunch and your quiche leftovers sounds great!

Glad you enjoyed them so much and thank you for sharing with us! 🙏 😁👍

Thank you, Koko. I really enjoyed the waffles with peanut butter and the blueberries. They went really well together for a side dish. The yogurt was good, too.😀👍

You’re welcome Leah! Always love your variety selections of yogurt.😋👍 So I guess you finished your leftovers now and tomorrow you will have to make new dish then. 😁

That’s right. I will have to see what we can do for lunch tomorrow. When I find out what we will do, I will let you and everyone else know.😀👍

The leftovers were cheesy and the broccoli was very easy to cut.😀👍

Leftovers rule! 😋👍I’ll be on the look out for your new creation of many wonderful dishes to come! 😁👍

Thanks, Jerry! Both meals were really great and my mom and I were talking about what we can try for the next quiche (flavor of rice). It's going to be very interesting to see what we can get for when the time comes. :-)

The waffles were really good and crispy. I love using peanut butter on waffles. The blueberries also go well with the waffles. I have to go and see if we have another batch we can use for next week. :-)

Thank you, Mandy! This looks nice. 😀

I may have peanut butter tomorrow for lunch with jelly/jam. 😀👍

Lunch looking good Leah and who doesn't just love opening the fridge to delicious leftovers for dinner, giving you something you know you'll enjoy because you ate some yesterday, and an extra hour or more because there's no food prep and cooking, and you can use to do something else that's fun!

That's exactly right, Sue. Eating leftovers helps make more time for other things to be done. Plus, if the leftovers are some of your favorite things, then that's even better! :-)

Hi Sue Leah yes and I like left overs because I'm just lazy 😂🤗🙋

That's okay, Mandy. Sometimes, when it's hot out with the temps., I like being 'lazy' because I don't want to warm up the house more than it had been lately. :-)

I can’t wait to see your postings for your meals when you’re ready to post them.😀👍

I had leftover red and sweet potato hash with baked beans and leftover gammon from yesterday's roast dinner for breakfast today which saved cooking from scratch!

Baby enjoyed her gammon leftovers yesterday!

No show without punch!

You're welcome! Both broccoli and spinach are two of my favorite green vegetables after lettuce and peas. :-)

I have never tried waffles, there's many places that cook and sell them as street food near where I live they smell very nice but never thought to try them.We all live peanut butter though, I made a couple of jars full last week from the fresh peanuts i had been given, the kids don't like it as is not the same taste as the shop bought ones with added sugar, but my wife and me love it👍😊

Does your children like thick peanut butter? Some brands have thick and thin types of peanut butter. I go with the thick and crunchy type of peanut butter personally. That's my favorite if we have it in the house. :-)

They like the smooth types, it's what I always bought for them, I haven't noticed any difference in the thickness from different brand names. 🙂

Tonight's dinner here was meatballs in tomato sauce from the store cupboard along with red potato mash with red cabbage which we enjoyed!
