Tonight’s dinner - crumbed chicken, avocado, tomato and coleslaw in a toasted brioche bun swerved chips, cooked in the oven with a drizzle of olive oil and sprinkled with salt, pepper, garlic powder, paprika and rosemary. It was delicious, even if I do say so myself. My husband was pretty impressed too 😉

I've been low carb for a couple of years, so that's not a meal for me.

But that said, looks great. I have 2 or 3 carby meals a year. That plate could be one of them.

Happy Australia Day. 🇦🇺 🦘🐨 🥧

Thank you 🇦🇺😉

I try and eat low carb (especially refined carbs) most of the time too but I indulge every now and then.

With the chips I cut the potatoes up up and microwave them for a few minutes. Then pat them dry with paper towel and put them in a baking tray, drizzle olive oil on them and sprinkle salt and herbs/spices, then cook at around 200 C got 30-40 minutes, turning them a couple of times.
