I quite like Pinterest for finding new recipes. You might also find some good recipe books out there - I quite like a Rose Elliott one I was given a few years ago.
If you like Indian food the choices there aren't exactly limited and not everything is very spicy. Just the range of things you can make with paneer and the various pulses (lentils etc) would keep me going for ages. One of the sites I like is vegrecipesofindia.com/ but there are many others.

I make a big pot of cabbage and lentils and it's great to share, healthy, and the perfect leftovers! I will dice onions and garlic and sauté at the beginning in olive oil, add the chopped cabbage, bay leaf and thyme and continue to sauté for 15+ minutes to help soften more, sometimes you can add a splash of chicken or veg broth, but not too much as it will steam it. Never add acidic ingredients to the hard cabbage because it'll make it stay hard! Once softened, I add in lentils and if you can get it in the international section of your grocer or a European deli, grab some Ajvar and mix it into the pot! Ajvar is a Balkan roasted red pepper and eggplant spread and is divine! Adjust to taste with salt and pepper and it's a fab one pot dinner!
