Hi everyone,
I baked this for dinner last night and there's plenty for today and I often think dishes have even more flavour the nest day.
I used green lentil pasta penne, red lentils cooked added to caramelised onions garlic tomato mushrooms and green beans with a little chilli and other spices. Then I added a tin of coconut milk to make it nice and creamy and I put some quinoa flakes on top and baked.
The one is gluten free and plant based as is the meal which I am looking forward to having again tonight.
