I’m off to hospital on Thursday for ankle surgery so I’m focussing on eating well now and cooking up a storm for the freezer.
I made a Barley Power Salad (recipe below) which we had with a frittata.

I made a pot of chicken and veggie soup and also a veggie slice which freezes well.
It’s a long recovery after surgery so I’ll be relying on my family to cook which could be interesting 🧐
