This is simple country style soup using not many ingredients
One Carrot, One stick Celery, One Onion called Soffritto basis of many the recipes I do.
Buy frozen fresh or make create tubs of the three veggies or use soup bags.
Note some pleasant music slow chopping and it is done.
Use Passata Tomato Puree herbs stock red wine vinegar freeze these veggies do not go off and done.
Cheat then when needed defrost use in recipes.
Do same with Peppers and Courgettes you buy these all diced sliced for you rself but why waste money.
Core courgettes good to freeze save time next recipes.
Notes some ideas for you all so this my simple soup with that in mind.
One tub or bag of defrosted Soffrito made yourself or use frozen super or fresh.
One tin Chickpeas drained.
One pack Chipolatas out of skins in to pieces bits does not matter..
METHOD.
Add tub of Soffrito to a saucepan defrosted. Might need some more stock or more passata.
Tip do not can not get passata use tin plum or chopped blitzed up .. Fine..
Sausage meat add to soup stock when it comes to the boil allow to drop in and poach meat medium heat.
Add Tin Chickpeas that easy done, more herbs if you wish any thing Parsley be fine or a Bay leaf.
Allow ten minutes for Sausage meat to cook through check as veggies already cooked takes no time at all.
Use slow cooker use other beans pulses, your choice.
Used this with Burger meat Chicken ones has herbs spices in them just cooked them oven sealed then diced up warmed through..
