1 red pepper, 100g cherry tomatoes, 1 onion, 2 garlic cloves, 1/2 tin of chickpeas, 100g spinach (I used frozen defrosted), 1tsp spice (I used smoked paprika), 4 eggs, olive oil

Gently saute onions and garlic in an oven-friendly medium frying pan, add diced pepper, chickpeas and spice, saute for 7 mins. Add spinach and halved cherry tomatoes. Finally pour beaten eggs over and allow to set for a few minutes. Place pan under pre-heated grill until golden.
