This is great Cooper, thank you for sharing. I loved strawberry Jam when I was a child, but haven't had any for years because of the sugar content. This is a great alternative
Yes, it's really low sugar but still sweet enough for me. You can add small amounts of sweetener if you like though
I might try with some frozen strawberries, but I think I'll half the ingredients in case it doesn't work as well.

I add chia seeds to apple sauce and use it on crumpets
I have done the same with raspberries and I have a recipe fir strawberry chia jam as well that I would like to try
