Hi, I have used this recipe a few times (and again just now), so thought I would share it with you. It always comes out very well and tastes very good.

150g butter, 150g light brown sugar, 2 large eggs, 1 tsp vanilla essence, 150g GF plain flour, 1 tsp GF baking powder, 75g topping mixture of anything you like (raisins, chopped almonds, chocolate bits, granola, etc.).

Whisk butter and sugar until light, then add remaining ingredients, except the topping mix. Tip into a 20cm square greased and lined shallow tin and smooth the surface before sprinkling over your chosen topping. Bake at 180 deg C for 30-35 minutes. If liked, you can drizzle 1/2 tbsp of honey over the cake when it comes out of the oven. Cut into squares when cooled and enjoy......

This sounds lovely! I need to bake some cakes for my work soon, and this sounds like it might be a good one o try :) How many bits of cake would you say it makes?

I usually cut them fairly small which gives me about 30 individual cakes - something like 2 x 1 inch. You can of course make them any size you like, but this size gives me two bites which stops me being too greedy! I freeze the batch and just take out one or two at a time.

That sounds ideal though - I tend to make something I cut small for the wider office, so this sounds perfect :)
