I got a couple of avos recently and on yesterday I had one of my avocado/banana puds :).
I know having fruit at lunch raises blood sugar levels but I’m not diabetic so for me, I don’t care what level they are.
Anyhow, I slightly changed the recipe this time. I added lemon juice in the last pud, this time I went without.
I added a chia and flax granola to it to add to the calcium intake.
It was yummy.
Today I had another banana/avo pud.
I added the chia/flax granola and a bit of cacao+ powder... it has macca and bee pollen as well.
Usually the puds look mainly yellow but slightly green. After adding some cacao+ powder it looked kind of like a mousse with a hint of green.

This sounds really great and I would love to try this very soon. Can another fruit be substituted for the banana?

Of course, substitute away :).
Not sure what you would use instead but I say try different fruits/veg until you find something you like.
I think if you add 1 and 1/2 bananas or maybe 2 bananas and an avo then it might taste more like white chocolate... well I think it does :).
