Replacing stuff in recipes!!!

I quite enjoy taking a recipe for which I do not have the necessary ingredients - and replacing them with something else. Half the time I have to because I nearly always don't have something required in a recipe . I got a freebie magazine yesterday from the grocery store and it had a very attractive looking photo of a Kale and Mushroom Fritatta . I wanted this for my lunch today - but had no Kale or Mushrooms =- but I did have eggs!!! That is what a Fritatta is made from :) and I had a packet of frozen baby spinach ( always handy to have sitting in the freezer) and some left over red salmon from last nights salmon bake. The spinach box said to pan fry the frozen balls with a small dob of butter - so once i had done that and flaked the leftover salmon, beat a couple of eggs and poured the lot into a frypan . Served up onto some wholemeal toast and seasoned with salt and black pepper, I was in heaven for my lunch! :) I must get some Kale and mushrooms sometime though to try out the original recipe. I made an apple pie once - which had no apples , but I did have pears and pumpkin

Your lunch sounded wonderful, and I think your approach to cooking is great - I rarely have all the ingredients either, and adapt according to my preferences and what I have available at the time - it works out well, and you can sometimes get a result which is amazing - for example your Pear & Pumpkin pie sounds fantastic! :-)
