Recently I've been experimenting with buckwheat flour and Penny mention an apple and buckwheat flour cake that was East European and I found this recipe from N Italy for a cake made with 1/2 buckwheat flour and 1/2 ground almonds with apples, I added some sultanas which I soaked in hot water with a little ginger before adding to the cake mix with some mixed spice. I also put some flaked almonds on top. Buckwheat flour has some excellent qualities as do ground almonds so I consider this a healthy treat.
Here's the recipe I used and it's worked a treat in my opinion:
What a beautiful Cake! I love the fact you soaked the sultanas with a little ginger - I bet that really added a gorgeous flavour. I will hope to try this cake sometime - I feel sure it would be very popular with people I know.
Thank you Zest, some recipes I just love sound of and have to try them. Soaking dried fruit with spices is a trick I found when making a Brack which's a fat free cake which you soak the dried fruit overnight in spices...

I like the sound of recipe, itβs not too complicated and the egg whites should stop it being too heavy (my first attempt at a Buckwheat cake was very dense). I shall be trying this recipe soon.
Hey thanks Penny and thanks for the idea, I have to confess I forgot and just put 3 eegs in the food processor. The apples are Bramley so are slightly sharp which I like otherwise eating apples would be sweeter. This recipe says use 8g baking powder so I just used 1 heaped tea spoon and its worked fine. So good luck if you try it I'd recommend it as its a great cake recipe regardless of being gluten free.
