Today I used one non stick frypan to prepare lunch. I charred half an avocado, fried an egg then threw in some spinach to wilt and served it with smoked salmon.
This meal made me think of my 25yo daughter who is very health conscious and fit. When she was in high school some of her friends were doing the “Live below the line” challenge where people can only spend $2.00 per day on their food and they raise money for charity. I asked if she was going to do it as well and she said, “Don’t be silly. You can’t live on smoked salmon and avocado for $2.00 per day.” 😉 She sponsored her friends though.
