I am single and looking for a ideas on what cookware to get. I see a lot of one pan recipes on the web so would a large casserole pan be a good start?

I think a large casserole pan would be a good potential start. I don't have any recommendations though - I usually buy whatever looks durable and economical.

I find it handy to have a stock pan /sauté pan that has a lid and is suitable for use on the hob or in the oven. Good luck.
Congratulations on making the switch to home cooked meals. They are so much tastier that processed food. It would be good to get a set of pans with lids, so you can choose which size you need depending on how many you are cooking for. Try to get some with heavy bottoms as they will spread the heat better and last longer. I normally make all one pot meals on the hob with a lid on, that way it's easier to check on them than having to remove from the oven all the time. I also have a glass or ceramic dish for the oven for bakes. Good luck
I would buy a small 2 layer steamer which means that you can cook lots of veg and even fish quickly and you can boil potatoes / rice / pasta in the base . Using one ring , one pot but separate vegetables and not much washing up .
Great suggestions! Looks like there are a lot of resources on the internet and youtube for health recipes also.
Instant pot is a must. get one from amazon.
