Gluten free vegan Red Lentil Fusilli with veggies and roasted seeds, 🥘

Hi everyone,

Here's what I had tonight, its red lentil fusili which is an amazing deep colour, the packets in the background.

I realised how tasty roasted seeds were when I started putting them on home baked bread, they don't take long to toast and have such an amazing taste and flavour and are very healthy so it's win win.

I cooked broccoli cauliflower carrots white onion with golden linseeds chia seeds ginger turmeric black pepper nutritional yeast and GF yeast extract and I scattered some toasted seeds on them.

You can buy Pepitas which are shelled pumpkins seeds roasted and they're an amazing ready made snack.

Looks great Gerry. But why buy toasted pumpkin seeds ? It's so simple to dry roast them in a frying pan and much cheaper. I toast a batch of pumpkin, sunflower, sesame seeds together and throw in some fennel, aniseed or caraway for extra flavour. I buy big 1 kilo bags from the health food shop and store in a kilner jar.

Hi there, I do toast my own seeds I was just saying you can buy pepitas which are hulled and toasted so an instant snack.
