I really enjoy pickled beetroot in salads, I think it tastes really good that way.

Hi zest i had a look at the link it's really interesting i had ham and beetroot tonight and i like the thought of the sardines and toast with beetroot I'm not sure about the mackerel but i will try it.i hope you enjoy your special meal tomorrow 😉xx Rosie

Beetroot soup- vegetable soup with the beetroot grated in at the end to retain the colour. In salads with goats cheese and walnuts. There are loads of recipes online.

I have used it instead of carrots in cake, also in a gluten free red velvet torte.
It's nice in parsnip soup with lentils, & a bramley apple added to stop the taste overpowering the other ingredients.
I wash and grate small beetroot into salads and cooked veg. I believe it loses some of the nutrients responsible for lowering cholesterol and blood pressure when cooked. It is also delicious roasted. There are lots of lovely recipes online, see bbc good food for lots of info on its health benefits and recipe ideas.

I don't know why it is but you always make it sound like you have the only right answer and many of the 'facts' you give are disputed by nutritionist and scientist. By all means offer guidance but don't please make it sound that you have all the answers. Sorry if this sounds offensive but I have had this discussion with you before. I don't intend to get into a debate about it, this is just how you come across to me.
People with certain conditions have to be careful when taking beetroot, pregnant women, people with Wilsons disease etc, it can also lead to kidney stones if you use to much if it. There are a other conditions that don't go well with beetroot but in general it is healthy to consume.
Hi jimtom i read the link you gave me and it was very informative especially about the kidney stones that's why i said i wouldn't be over doing it lol i appreciate all the information i get including concerned's
