Here's what I had for lunch today its home made gf bread toasted with cashew nut cream cheese topping.
The cream cheese I made by soaking some cashew nuts over night and then this morning I blended them with a little water a tea spoon of nutritional yeast 1/2 teaspoon cider vinegar chives ground black pepper and a little sea salt and it tasted really good.
When I first saw nut milk and creams I thought that nuts but now I can't believe how easy creams are to make with nuts like cashews. cashew nuts are a very good source of vital micronutrients like magnesium iron and calcium so combined with nutritional yeast this packs a punch with B12 so a great combination with cashew nuts.
And I had it with some vine tomatoes as cheese and tomatoes are a great combo even if its nut cheese. π
