I love getting creative in the kitchen. I opened the fridge to see what was there and decided to see what happened when I threw a few ingredients together. I had left over roasted pumpkin so I added extra veggies (English Spinach, mushrooms, red onion, parsley), eggs, grated cheese, EVOO, whole meal flour and baking powder and salt & pepper. 25 minutes in the oven and Voila! π
