I hope you are having a great weekend. Today I would like to encourage you to do something for yourself and cook a very nutritious and tasty meal. I have this feeling that autumn is already here and this meal is just perfect to warm you up and gives you this nice, cosy feeling...
2 celery sticks
1 vegetable cube in 240 ml of water
250 g of tomatoes
1 tbs of tomato puree
1 can of chickpeas from water
1-2 rosemary twig
Cut all vegetables. First, caramelise the onion, garlic and rosemary on the pan with a bit of olive oil. Add tomatoes and stir for another couple of minutes. Add all vegetables (potatoes leave on the side, the go in at the end) and vegetable stock, stir for few minutes, add tomato puree. Now is the time to add the potatoes. If there is not enough of liquid add more water, make sure potatoes are soaked in the sauce. For the thickness add a bit of flour. Cook until everything is soft. At the end take out the rosemary twig. Enjoy!
