Hi, today I made a soup with every vegetable I could find. Needed to empty out the fridge and cupboards anyway...
It consists of : onions, garlic, carrots, beans, tomatoes, cabbage, celery, potatoes, peas, sweetcorn. Topped off with spring onion and a small grating of cheese to garnish. 2 wholemeal pittas and I am sorted. Here’s to batch cooking!!

Hey what a great idea clear the fridge out and have a lovely soup with a great topping 😊 you said you liked soups so thanks for posting this.
I started cooking this at 10am, ate it at 5.30pm. During that time I grabbed a tin of shop-made vegetable soup for my lunch, to see the differences as well... I can honestly say that my version was far superior (or should that be soup-erior, lol). Better for me and tastier. So proud of myself.
I just noticed that your a coeliac. My mother was too, also wasn’t diagnosed until her 40s. She would be 63 today but passed away nearly 8years ago.
She hated it, when we were growing up there was basically no ‘gluten free’ food so she would just make curry for dinner; every day, all week and then another big curry at the weekend! Occasionally take us to KFC and pinch the skin from our chicken as a treat, knowing full well it would cause her to be ill the next day.
I love clear-the-fridge soups and yours looks really yummy, the trick is if you get a really good outcome to remember to write down what you put in it - I always forget!
