Lunch today, a different way with smoked haddock which we both enjoyed.

Bottom layer, tomatoes with a little garlic and basil. Middle layer, smoked haddock, top, Mozzarella and Cheddar cheese and two springs of Rosemary (do not eat).

Baked in the oven for 20 minutes. I served it with baby boiled potatoes but crusty bread would be good if you wanted it as a supper dish.

I adore fish & that looks brill! No carbs. or very few. What time is tea?

If you don’t have potoatoes yes it would be no carbs. I never thought of that so thank you.

Sweet potatoes have less carbs. compared to the regular potatoes. Do you like sweet potatoes?

I love smoked haddock but beware if there is salt as often there is and you have high blood pressure!

Yes, you are right. I only add a little black pepper never any extra salt
