Lunch today, a different way with smoked haddock which we both enjoyed.
Bottom layer, tomatoes with a little garlic and basil. Middle layer, smoked haddock, top, Mozzarella and Cheddar cheese and two springs of Rosemary (do not eat).
Baked in the oven for 20 minutes. I served it with baby boiled potatoes but crusty bread would be good if you wanted it as a supper dish.
