Dinner superfood beef curry - mince, grated carrot and courgette, blitzed broccoli, red onion, ginger, garlic, spices, peas, spinach and green lentils in a tomato and coconut milk sauce served with black rice.

It was lovely I’m using the 4 spice blends from the spicery so many different combinations and so much easier than buying lots of different ones - love black rice as well

I’ve taken a snapshot of your ingredients. At first I thought “oh, black rice - I can’t have that because I’m on a low carb diet”. I just checked and now realise I can easily reduce the amount of rice and at 34g carb per 1/2 cup (cooked) I can really enjoy the meal! I’ve never eaten a curry with minced beef though. Would it work with Chicken?

I’ve never used beef until recently either and it is fab I would recommend trying beef mince or lamb mince in a curry but chicken would def work (I regularly cook a a Korma and put grated veg and lentils in that).
I use the 4 spice mixes from the spicery as you can create hundreds of combos with just 4 blends without buying lots of separate jars - I used 3 of the blends in this curry but anything goes!
I try for low carb i only have wholegrain foods never white and I’ve taken a lot of pasta (I’m coeliac so it’s gluten free) and white potatoes out (do eat them 1-2 per week) and replaced with black rice and sweet potatoes. I add a lot of beans and lentils and veggies to everything though.
Black rice is my new favourite food I def won’t go back to brown rice!
I got the ground flaxseed and chia seeds in Aldi - I got some cocao nibs too!
