Veggie casserole with grated sweet potato topping 🌢

Hi everyone,

Here's a casserole I made for tonight and its new potatoes with baby carrots mushrooms, white onion, red quinoa, yellow lentils and chilli with chia seeds, ginger, cumin, coriander turmeric and black pepper with grated sweet potato on top with some thinly sliced baby peppers (which burnt slightly) and sesame seeds and pumpkin seeds. I love toasted seeds on bread so often add them to baking now.

Seeds add extra nutrients and micronutrients so are worth adding to meals.

I roasted some purple tender stem broccoli as well which complimented it well...

This looks yummy. The colours are lovely too :) is there veg stock in there/ any spices you added?

Hi mysmugat, Thank you and I didn't use stock I used chia seeds, ginger, cumin, coriander turmeric and black pepper the chia seeds and enough water to cover and bake.

I use chia seeds as they absorb a lot of moisture so thicken the gravy it cooks. 😊
