I thought I'd make a bubble and squeak using mashed cauliflower instead of potatoes as it sounded good after chatting about it on here.
I cooked a cauliflower, curly Kale, hot chilli and red onion. I mashed the par cooked veg with some peanut butter and vegetable stock, spread it in a baking dish and put sliced chestnut mushrooms, halved baby tomatoes, cashew nuts and sesame seeds and baked for about 35 mins and I baked some sweet potato to have with it and gravy and I enjoyed it.
It is gluten free and vegan and could easily be low carb by omitting the cashew nuts.
