Here's a pie I made for tonight and being gluten free I don't always bother with pastry and make a savoury crumble topping which works well, you just need plenty of gravy...but hey thats OK.
I mixed 1/2 ground almonds with 1/2 plain gluten free flour and added olive oil until it was like bread crumbs and then I added spices and herbs to season.
For the filling I used red onion, garlic, hot red peppers, purple broccoli tender stems and chestnut mushrooms seasoned with ginger, coriander cumin and turmeric and I made a gravy with plain flour chia seeds and stock. I kept some of the veg to have with it and I roasted some baby potatoes in their skins with sweet potato and this is the photo before I poured gravy all over it...
