Vegetable shepherds pie with sweet potato garlic and feta topping πŸ₯•

Hi folks,

Well I had a nice simple meal tonight with lots of my favourite veggies and I topped it with white and sweet potatoes, garlic and grated Feta cheese to give to an extra bite.

I hope everyone enjoys their evening. 😊

Hi CatsHelpMe, thank you and it is quite easy, I used red onion, fennel, chilli, green pepper, tender stem broccoli, baby leeks and carrots for the filling, which I gently cook the onions, pepper and chilli in some olive oil then add the other washed veg + seasoning and leave them to cook gently together whilst I cooked the white potatoes with sweet potatoes and garlic and when they were just cooked I added the water to the veg. Mashed the potatoes and added grated Feta. Put the veg in a large oven dish and covered with the mash and topped with sliced vine tom's and baked for approx 1/2 hour. 😊

I'm trying to go vegan... what if I replace the feta with a touch of nutritional yeast?

Ifyou are short on time to cook a meal, have a cooking day one day a week, cookloads of meals (just double or tripple the portions, freeze what you want to eat through the week,pop it in a 30min ping machine (Microwave) Jobs a good one. Not only does it save time you know exactly what has gone into it, and you save a small fortune on ingredients and on prep/cooking time. well worth the extra effort required initially.

That looks fantastic! I love sweet potatoes with any meal. :-) I actually had sweet potatoes recently with my dinner a few nights ago and had a side salad to go with them.

Is that potato + sweet potato mashed together?

I have a glut of sweet potatoes at the moment (we grow them for the green tops, not the tubers). A couple of weeks ago I dug one up out of curiosity and made mash with it (just butter, cream, salt + pepper). It was great.

You would normally leave a sweet potato in the sun for a week or so ('curing'), which causes them to metabolise some of their starch into sugar; that's why sweet potatoes are sweet. In this case it had a texture and flavour almost identical to a regular potato. I'm thinking I have a new potential product here :) Regular potatoes won't grow in the tropics.

Hi TheAwfulToad, I cooked 2 med potatoes and one large sweet potato together with some finely chopped garlic, then I mashed it with a little goats butter and goats milk and then added grated Feta and then baked.

Your home grown sweet potatoes sound really good but I buy mine so don't have to worry about curing them so just have to cook them LOL. But fresh from the garden sound a real treat to me. 😊

Thanks and no I live in the city, I find goats butter and milk easier to digest as its molecules are the same size as human milk.
