Hi folks, today I'm visiting this afternoon so whilst I made some bread I made a quick and easy soup to warm me up as its only 1 & 1/2 mile walk through the allotments.
So here's the soup and the ingredients, its tomatoes, white onion and chicory, with fresh coriander and black pepper for seasoning all gently cooked in olive oil and then blended with coconut milk. You could make this with a tin of toms if you want. I just want to show how easy it is to eat well. It was so filling with just one roll I couldn't eat any fruit afterwards.
This afternoon I'm walking out of choice as I'd rather walk than drive on a day like this as eating healthily is only part of the being healthy equation.
