Yesterday we had a really interesting soup with avocado healthunlocked.com/healthye...
And I'm a terrible copy cat and knew I had to make a soup with avocado and decided on mushroom and just lightly cooked white onion, chilli and chestnut mushrooms then when they were softened I blended and added around 300ml of coconut milk so this is a vegan soup too. For seasoning I added a little black pepper and sprinkled parsley on top.
I think the taste from the avocado was amazing and I really enjoyed it and found it warming and filling.
