And I'm a terrible copy cat and knew I had to make a soup with avocado and decided on mushroom and just lightly cooked white onion, chilli and chestnut mushrooms then when they were softened I blended and added around 300ml of coconut milk so this is a vegan soup too. For seasoning I added a little black pepper and sprinkled parsley on top.
I think the taste from the avocado was amazing and I really enjoyed it and found it warming and filling.
The soup sounds really great! Avocado is a favorite of mine, so that's definitely going to work when I try this. I bought some avocado recently, so when they get ripe enough, then I will do the soup. Just a few more days to go!
