Good evening folks, I like soup this time of year as its warming and gives a sense of wellbeing 🌝 I also like using up left overs and had a little veg with red peppers and carrots so added that.
I made this soup by pureeing cooked peas with coconut milk and then added the crushed garlic, the veg, red and green chilli + cumin, coriander and coriander leaves and a 1/4 tea spoon sea salt and gently cooked. I sprinkled it with coriander leaves and a little ground pepper. I also made some gluten free bread this afternoon so had one of these rolls with it.
Sometimes the simplest things cane be the nicest and this is very easy to make.
