Plant based Cream of mushroom soup πŸ₯£

Hi everyone,

Tonight I made a soup with organic mushrooms and onions with garlic spices. I lightly cooked the onions and mushrooms in olive oil to soften added some cold water with a desert spoon of gram flour and some low salt bouillon approx 400ml blended it added some soy cream and cooked it gently, I put a little parsley on top.

I enjoyed it, it is very easy to make has plenty of flavour and is gluten free and plant based.

Apparently today is one of the busiest shopping days of the year and tomorrow is the shortest day so it's onwards and upwards from then on...well thats the plan. 😊

Hi Jerry is there a lot of salt in your soup recipe

Hi Alison, I used less than a teaspoon of low salt bouillon as I don't like salty food so rarely add it.

Salt raises the cooking temp of water and you can always add a pinch when its cooked.

Your mushroom soup sounds wonderfully creamy. I don't know if you’ve tried (or like the flavour?!) of tarragon which goes really well with mushrooms. ☺️

Thanks ThyroidThora you can make it with just water it's still nice and thick, so you could use any plant milk.

Any chance of a more detailed recipe for this please? I miss mushroom soup but now I have discovered soya cream I'd like to give it a go. If possible, thank you.

Hey happytulip i made this a year ago, I use just under one level teaspoon of low salt bouillon and around 2 desert spoons of cream as I don’t follow specific recipes just know what works fir me.
