Tonight I made a soup with organic mushrooms and onions with garlic spices. I lightly cooked the onions and mushrooms in olive oil to soften added some cold water with a desert spoon of gram flour and some low salt bouillon approx 400ml blended it added some soy cream and cooked it gently, I put a little parsley on top.
I enjoyed it, it is very easy to make has plenty of flavour and is gluten free and plant based.
Apparently today is one of the busiest shopping days of the year and tomorrow is the shortest day so it's onwards and upwards from then on...well thats the plan. 😊
