Vegan, Fennel White Onion and Chilli soup with Green beans and Coconut milk 🥥 🥣

Good evening everyone, here's some soup I made tonight, well as everyone else is having soup, I'm not missing out...

I sliced a fennel with white onion garlic and red chilli with cumin, coriander, ginger and black pepper and cooked it gently in olive oil then when it was soft I added some water and let it simmer. Then I added the coconut milk a few minutes before serving. The red chilli gives it its colour as it looked quite pale in the pan before I blended it. I added cooked sliced green beans when cooked.

I had it with a chunk of home made gluten free bread and this shows its texture.

The soup and gluten free bread sound really fantastic, Hidden . I know this is the perfect time to have some soup this weekend. We still have lots of windy conditions, so the soup will be a nice warm-me-up type of idea. Thank you for posting this today! :-)

Thanks Leah, I’ve seen some of the storms you guys have been having, we’ve been hit wit our worst snow storm for years and that’s blanketed the UK so spicy soup is definitely order of the day. 😊

Looks great, never tried fennel, might give it a go......Having min 1 meat free day a week in this house. So new ideas brilliant. Hope you enjoyed it

Hi Micshee, Thank you I really like fennel and cook it like onion it has an aniseed flavour and is very good for us as it contains histidine and iron so it helps our bodies produce haemoglobin and prevent anaemia.

Its also good for muscles and is good for people with IBS and ladies with menstrual cramp, amongst other things.

Looks amazingly delicious! I don't think with my IBS I can have chilli or too much white onions. So I'll just admire your picture.
