Well I've now made my first nut roast. I haven't had any yet but it smells delicious and has some wonderful ingredients in it. There was a fair bit of chopping of vegetables to do but the actually making of the loaf was very easy.
I am so looking forward to eating it on Christmas Day (the recipe is suitable for freezing).
Thank you and I certainly will and it's great knowing what's in your food, there is nothing worse than processed food. It'll take me a long time to catch up with you, Hidden and Hidden in the cooking stakes though.
I tried some of it that was stuck to the corner of the tin and it tastes delicious.

There certainly are some lovely ingredients in the recipe. I haven't made the easy tomato sauce but may do that on Christmas Day when I have the Nut Roast. Thank you for the lovely comment re my baking, meals aren't normally my forte but this did turn out well.

Hi well done you! I made my first nut roast on Sunday from my own recipe. I'm a vege and a dietitian who has worked extensively in food service and I'm no stranger to recipe development hence why I am so bold. I wanted to trial it before Christmas day. I've been a vege for almost 30 years and always just had veg and potatoes or quorn. I quite liked my effort but one of my kids who is also vege and the rest of the family hated it. I really love nuts so I used whole nuts rather than ground, breadcrumbs, sage, parsley, and bound with aquafaba rather than egg. I put a layer of nut/breadcrumb etc mix, a thin layer of cranberry sauce and another layer of above and baked. I'm going to trial again, using fewer whole nuts, adding some ground and leaving out the cranberry. You can always add cranberry on the side. There has to be whole nuts in there for though for the texture and crunch. I used aldi bag of mixed nuts that I snack on almost daily and they're a good price.
Hi there Mandy, thank you and what a fantastic job you have, nutrition is something I would have liked to have studied but never did and I am very interested in it now. What I did with my nut roast was put the Cashew Nuts in a bag and used my role pin to break them up, easier than trying to chop them with a knife etc, this works really well as I do the same thing when I put nuts in my morning porridge.
I also like the sound of your nut loaf as well. Unfortunately some meat eaters either don't like veggie food or won't try it - my hubby won't try it!
I had my Nut Roast on Christmas Day and I certainly wasn't disappointed, it tasted really lovely. One thing I have to say though, if any of you are thinking of making this I would make 5 portions out of the loaf rather than the 4 recommended, albeit some of you might be hungrier than me and want a bigger portion.
Definitely worth the time chopping up the ingredients.
