Roast dinner duty today

Today's roast dinner will be chicken along with a mixed veg mash that is red and green cabbage, butternut squash, carrots and parsnips and red potato and also some Brussels sprouts as well.

Been busy in the kitchen today cutting up butternut squash to use as mashed potatoes in later meals this week and sorted out some usual veg as well for future meals and listening to rave music from the 90s and managed a walk out as well.

Good news it's my second covid injection tomorrow down in the bay and my sister in law is coming with me.

I decided to roast the rest of the butternut squash along with the chicken to get my money's worth from heating the oven.

I used to make banana loaf, lovely and moist and served with a smattering of butter. 🙂

Yes we enjoyed our roast and have some chicken left over to make a casserole with.
