Can.. I eat boiled potatoes sandwich with some chop onions ,green peas and capsicums, is it healthy in breakfast..?

sounds good and healthy to me. The only thing is i cant really eat white potatoes as they make me crave sugar and sweets so i stick to pink potatoes. it looks nice and the bread looks toasted. i hope you enjoy your sandwich.have a nice day too. love grace xoxoxo

You can eat anything you like for breakfast, though perhaps add lots more peas for protein.

It does not look like the healthiest breakfast to me. The brown bread is likely to be coloured white not wholemeal. Supermarket bread tends to be full of enzymes and preservatives. Adding another carb in pots seems to make it a fairly quickly absorbed carb meal for breakfast. However, if your potatoes were made last night and heated up then it turns into resistant starch and lowers its overall GI.

However as an occassional breakfast it looks great!!

What is 'resistant starch'? I'm not familiar with this term... :)

The potato changes how it is digested when it cools down. From becoming quite a quickly absorbed carb, the body finds it difficult to break down. So the carb is now absorbed slowly and starts acting like a high fibre. The same happens to pasta. It is suppose to be good for your gut bacteria.

Very interesting! I'm aiming to cut out carbs completely but I think realistically that's going to be too hard. It's good to know reheated carbs/pasta/rice is better for you than the fresh stuff. G Index is a strong tool for healthy eating, especially for me
