Bonfire night pudding, ๐Ÿ

Hello everyone, this a baked rice pudding that I've just made with rice flakes and coconut milk.

Now for those who are unsure of making grain free dishes like this, there is a simple rule 2 oz to 1 pint or 55g to 550ml now thats for a simple gruel or porridge and for a thicker creamier pudding use less liquid and I use 55g to 400ml of liquid and it doesn't matter if you use quinoa flakes, buckwheat flakes, rice flakes, pudding rice, coarse corn meal etc it is the same ratio and depending on how creamy you want to it whether you use water, milk or some of each and it doesn't matter what milk you use. My neighbours gave me this pot of honey for feeding their cat while they were in Portugal and it is quite sweet so I thought that I sweeten this with it. The reason it looks brown is I stirred in cinnamon and mixed spice.

I love food like this on these cold days as it gives me a warm sense of well being and I like that. I also do not like things too sweet and you can always add more...

55g Rice flakes

400ml coconut milk

55g sultanas

4 tea spoons of runny honey

1 tea spoon cinnamon and mixed spice.

I put all the ingredients in a pan and bring to the boil and simmer for 5 mins then put it in a pyrex dish and baked for 1/2 hour @150C (this saves on baking time) so this is fast slow food LOL

Hey thanks, I didn't have any nutmeg ๐Ÿ˜Ÿ so I improvised ๐Ÿ˜Š and I enjoyed it...

It is a desert but you could have it as a breakfast, its a very simple easy recipe and has a very low percentage of sweetener, 35g honey.

Not wanting to rain on your lovely pudding, but these days honey is not considered vegan.

Hi Andy, thank you as I only became aware that honey is not vegan recently so I've removed the vegan label.

I'd like to keep bee's as I think they're fantastic lil creatures...
