Do you like Indian/Asian food??? There are a large variety of spices and pastes that can be added to almost all foods that set the taste buds alight. They don't have to be "hot" - most spices do not introduce hotness into a dish. Take your turkey and sweet potatoes and frozen mixed vegetables - and stir fry them together with some curry-type paste - or put them in a slow cooker or in a pot on a slow stove top.
Homemade burgers (5% mince and wholemeal bun) topped with salad and mayo with homemade spiced wedges (oven baked).
Ever tried 'no crust quiche'? Chuck some fresh veggies (sweet peppers/mushrooms or what ever) in a well greased oven dish or muffin cases. Whisk up some eggs with a bit of milk - season (add tumeric or any other spices if you wish). Sprinkle some grated cheese on top. Oven bake till cooked and...boom a tasty, healthy, easy, cheap meal! (Oh, and you could chuck some bits of turkey in there too if you want...)
In my experience, frozen mixed veg are always liven up and they lack the taste, texure and nutrients of fresh, so I'd say, always try to go with fresh if you can...
