Low carb vegetable cheesy bake with crispy baby parsnips

Hi everyone, here's what I made for my evening meal tonight, its locally grown vegetables cooked in a cheese sauce, cauliflower mushrooms and baby tomatoes with crispy baby parsnips which I really like. I made a roux with gram flour goats milk and grated cheddar cheese.

I used whole milk (goats) butter and strong cheddar cheese as they are all saturated fats but still natural wholesome foods in my world and I love meals like this, it is also gluten free and vegetarian. 😊
